Overheating

I just purchased a 2001GS 1150, riding home in traffic it heats up to just below the red. It was just 100% gone thru at the shop, is it normal to heat up like this ?
 
Yes, it is "normal"
You do not mention what your ambient was but you should not be going past 7 bars on the RID
Normal riding should be at 5 bars.

Question: From what source does the temp gauge draw its input? Is it oil temp? Spark plug temp ring? Engine block sensor?

It is oil temperature,
NTC Thermistor at top of the engine block, right side, oil gallery by the thermostat feeding the oil cooler line.

 
Yes it was stop and go traffic, temp outside was about 70

Oilhead motorcycles depend on air flow through the oil cooler for cooling. Stop and go traffic may prevent sufficient air flow for adequate cooling, even to the point of actual overheating. Sometimes all you can do is find a way to get out of traffic and shut the engine down to allow it to cool.

Seven bars isn't overheated yet but it is getting close.
