Mid-South ride, eat, and meet

Willy wraps up the ribs with the dry rub plastic wrap and puts it back in the pit for 45 minutes to an hour, which tenderizes the meat and the rub adds flavor.

Willy really liked his grill marks on the rib slabs. Thought Ya’ll might like to see some of the process to get that good BBQ flavor. Wish I could give you that aroma and taste; the only way to get that is to come to Big Guns BBQ and try it out in person. I’m going today for full sit down lunch. See Ya there.:thumb
 
1/2 slab of St. Louis Style Ribs. $16. I think they thru in an extra side (mac&cheese). I get the employee discount and that helps a little. I usually get 2-3 meals outa this plate. They don’t serve alcohol, but the Shamrock Gas Station is next door. They’ll tell U to help yourself to the beer next door; no problem. This is good place to stop on motorcycles; easy in and out. Casual dress. It’s on US 64 about 200 yards from I-55 and maybe all of 5 miles from I-40. These good folks and they work hard to run a good clean restaurant. 2 thumbs up and 5 stars. They have a small in door air conditioned dining room. A large covered out door dining room and a medium size out door patio. It’s just a good place to stop and get a bite to eat then get back on the bike and motor on.:wave
 
Interesting location. Google Street View from Flowers Street shows a "Fresh Produce" business, but from Highway 64 it shows a used car lot.
 
That piece of property has been a plethora of little business’s. None have lasted. Patrick Jones has it now as a BBQ restaurant. He has a team of 4 people working hard to make this go. One long day shift. They don’t have back up. They go to the woods and cut it, specific trees for the pit. Move it, load it, clean out the pit. Process the meat. It’s a lot of hard work. U saw some of it in the pics. I walk a hundred yards down the alley Flower Trail and try to help as much as an old guy can. I go down and eat as a customer. Observe the restaurant and try to make observations that will help them have a better process. Their good people and I like hanging out with them. This is a good place to eat and works well for quick stop and eat. Easy in and easy out. Ride in get a bite to eat and ride on to your destination. It pretty much covers I-40/I-55 interstate across from Memphis on the Arkansas side. U gotta cross that river somewhere; going north, south, east, west. The address and tel. # is given, feel free to call ahead . Mid-South Ride, Eat, Meet, this is the Eat part. Patrick has applied for a beer license for those that want a cold brew, until then get it next door at Shamrock Gas Station. I’m about ready for the Ride part of the thread.:wave
 
Road Trip

It’s the day to go and pick up my R90 at Leo’s. Oh Happy Day Yea Hurrah and all that Jazz! :groovy
 
It’s gonna be a great old school bar hopper. Perfect for what I want and need. Rode it about 50 miles today. It was 2 wheel sex; yes sureee Bob. :dance:thumb
