We are touring around Austin Texas for 3 days and wondered what there is to see. We like history, ghosts towns, oddities, small cool roads, attractions - we stay out of big cities.

You did not say how far and how long of a ride you are interested in.

But 335, 336 & 337 over by Leakey in Texas Hill Country is one of the top motorcycle-riding-destination in the country. That would be about a 3 hour ride from Austin just to get there. Not much for "tourist sights" other than canyons and hills and valleys and some old towns, but great riding.
