Edelweiss offers tours through Morocco. I haven't done it but I've taken five other tours in Europe with them and have been very pleased.
I don't have a tour company recommendation, and haven't ridden a motorcycle there, but I made a shot of an interesting road in a trip to Morocco a couple of years ago:

The interesting thing about this road Reece is that it leads to a small hotel (shot taken from the hotel terrace). After that the road continues on. Your/my RT would have a tough time with the road thereafter, but a GS would have a fine time. Here's photo of the stickers all the clubs and moto groups have left at that hotel:

Looks totally like an airport FBO in the Fort Rucker local flying area, Except with motorcycle patches instead of helicopter unit patches.
Hmmm... where’s the GS giant patch? Or MOA patch for that matter. Looks like a trip is in order... one day.
