The BMWs are not disappearing. Most officials have their own equipment. The tour organizers contract for a fleet of loaner bikes. This time it was the Yamaha.

An Era of BMW with the Tour de France Ends
It is a sad day indeed! I always looked forward to see the fleet of RT's & GS's working in the Tour de France. Yamaha needs more exposure since Rossi and Viñales aren't winning!

I just had a salesman trying to sell me one on the basis it was much more stable if one wheel dropped off the highway...

I can see them being more stable in an edge trap situation. I don’t think the edge trap is what caused the fall in the video; it looks like the rider got over that better than a regular MC would have.
