Can anyone tell me why the diameter of the bars on sport bikes are narrower than street bikes or larger tourers?

Sport bikes like a crotch rocket? Because they are not full bars, they are stubs that mount separately to each fork tube below the clamp..all they need is the grip/switchgear part..

Other wise as the previous poster said..cause they are cheaper..you can buy high quality Renthal or Pro Taper in the 7/8ths size if you like..they will possess much improved vibration damping qualities since they are aluminum..
