Huntsville to South Dakota

Headed to South Dakota over Labor day weekend through Kansas and Nebraska, about the only two states left we haven't seen over the years. Anyone got any suggestions on must see, must do or must eat in either of these states?
 
Kansas and Nebraska, eh? Now that's a tough one. Do amber waves of grain count as can't miss sights?
 
One place cycle nuts might be interested in, Kansas Motorcycle Museum http://www.ksmotorcyclemuseum.org/ . Not a big place but a lot of old iron and flat track racing bikes of years past.

One place I like in Nebraska is "Pioneer Village" in Menden south of I80 near Grand Island and Kearney. http://www.pioneervillage.org/. what a place 28 huge buildings on 20 acres antique cars, tractors, 17 antique airplanes billed as the largest private collection of Americana .

Got any special interest? Any route planned? Western Kansas and Nebraska are both very open, usually hot, and can be very windy.

I do love the Black Hill area great bike country. Like to loop back through Colorado double treat!!!!
