Cross country ride - suggested routes?

I'm flying out in a couple of weeks to pick up a K1600GTL in Florida, meeting up with a friend and planning to head west out to southern California and ride the coast route back home to Seattle. I have about two weeks to do the whole trip. I'm familiar with most of the route up the west coast but I'm looking for suggestions for any other good routes through the lower south, Texas, NM and Arizona (saw a report on US 80 through AZ so will probably try that out). Excited to kick off the riding season with a nice long trip.
