Like R51/3? Vech at Benchmark Works has plenty of parts available. Probabaly also Mark Huggett in Europe at Bmwbike.

BMW themselves sell many /3 parts. A knowledgeable parts man at any dealership can order them. In the past, BMW Group Classic has put out beautiful glossy B&W pamphelets showing a sampling of the parts for post war bikes available.
When my /3 was rear ended, I was able to buy a brand new rear fender, which fit perfectly. It was in primer and cost about $600, probably less than a plastic fender for a modern bike would cost.
